Almond-Coconut Granola (low-sugar / gluten free!)


I love granola but I avoided it for years as the boxed varieties are generally full of sugar and super processed. I recently started making my own granola and I can't get over how easy it is. My favourite thing about granola is that it can be totally adapted based on what you have in your pantry. 

Basic Granola Recipe:
3 cups large flake oats
 *not instant, use certified gluten free if that's a concern
1 cup quinoa
1/2 cup chia seeds
1/2 cup flax seeds
1/2 cup unsweetened coconut
1 cup silvered almonds
1/2 cup raisins
1/4 cup melted coconut oil
1/4 real maple syrup
Generous sprinkle of cinnamon
Dash of vanilla

Directions:
Pre-heat over to 350
Mix oats, quinoa, seeds and almonds together in large bowl
In a separate bowl mix coconut oil, maple syrup, cinnamon and vanilla
Combine wet ingredients with dry ingredients and mix very well
Place mixture in single layer on parchment lined cookie sheet, use a spatula to flatten 
Bake for 20 - 25 minutes, checking frequently, it should be golden brown
Remove and mix with raisins (raisins will burn if baked with granola)
Enjoy!
