Wild Saturday Night!

Before having Henry I used to spend my Saturday nights going out for dinner, meetings friends for drinks or at the very least, getting out of the house! Well, times sure have changed around here. 

Tonight I spent an hour meal planning and ordering groceries as I am determined to get out of my cooking rut. Cooking and eating for one is a pain but I can't keep relying on quickie meals that leave me unsatisfied.

Here's what's on my plan for the week, feel free to share your own ideas in the comments!

Breakfast:
Smoothie packs are my go-to breakfast as they are easy, healthy and filling. I like to make a smoothie as soon as I get downstairs because otherwise I won't end up eating breakfast at all. Great suggestions from Pinterest below but really, anything goes when it comes to smoothies. I always make sure to add plenty of greens!


Lunch:
When I was working I used to buy a cobb salad for lunch every single day and I loved it. Eating the same thing day in and day out really doesn't bother me so this week I plan on making a big quinoa salad to make lunch a no brainer.


Dinner:
By the end of the day I have zero desire to cook, especially since I'm usually on my own. This week I'm going to make a batch of tuscan chicken and I'm also going to have eggs / veggies on-hand so that I can do a crustless quiche or quick frittata.
